Get to know our traders - Bao Down

“Are you down?”

If you’ve been with us since the early days, you’ll know Bao Down are no strangers to the STACK family. They were part of our original STACK Newcastle site from 2018 to 2022 with Hatch 76 before going on to serve their famous fluffy bao buns and Asian-inspired dishes at STACK Seaburn, STACK Lincoln, St. James’ STACK and Grainger Market.

Now, they’re back where it all began and we can’t wait for you to get your hands on their incredible menu once again.

From Market Stalls to STACK Superstars

Bao Down’s story is one that’s close to our hearts. Owner Alex Hindson, who also runs Hatch 76, first started out in the street food scene at Newcastle’s Quayside Market back in 2016, before launching Bao Down during lockdown.

When we opened the doors to our very first STACK in Newcastle in 2018, Alex was one of the original traders to take a chance on us with Hatch 76 and they’ve been part of our journey ever since, also bringing Bao Down to our original site after lockdown.

Their signature soft, steamed bao buns, packed with bold Asian flavours, quickly became a fan favourite. From STACK Newcastle to Seaburn, Lincoln, and St. James’ STACK, they’ve been wowing crowds across the country and now they’re ready to bring the flavour home.

What’s on the Menu?

Get ready for the ultimate bao experience. Each serving comes as a pair of buns, meaning you can mix and match your fillings, perfect for when you can’t decide between your favourites (and let’s be honest, you won’t be able to).

Expect to see Katsu chicken, crispy Peking duck, barbecue Korean pork, jackfruit, and crispy tofu & oyster mushroom on the menu, each one bursting with flavour.

And of course, no visit would be complete without their gyozas, loaded fries and Katsu curries. Everything at Bao Down is made fresh each day, we’re talking every ingredient and every sauce, so you know you’re getting fresh, flavour-packed dishes every time.

“STACK has been a huge part of our journey from the start,” says owner Alex Hindson. “We’re so excited to be returning to Newcastle for the opening of STACK Worswick Chambers. This city is where Bao Down really began, and we can’t wait to serve up our bao buns once again in the heart of the Toon.”

Back Where It All Began

For us at STACK, welcoming Bao Down back to the flagship Newcastle site feels like a proper full-circle moment. They’ve been part of our story since the very beginning, from our first days on Pilgrim Street to our exciting new chapter at Worswick Chambers.
