If you know, you know. Born and battered in Liverpool, Pattersons has been shaking up the fried chicken game for over a decade. We’re the ones who made fried chicken cool again — proper food, made fresh, served with attitude. Forget the drive-thru, forget the greasy kebab shop — this is fried chicken, done right, done boss.
From One Idea to a Full-Blown Movement
The Pattersons concept was cooked up by Darren James — a fella who spotted a gap in the market 11 years ago when fried chicken basically meant KFC or your local chippy at 2 a.m. He thought, there’s got to be more to it than that, and set out to create a proper restaurant where fried chicken could shine on its own terms.
To nail it, Darren brought in Michelin-starred chef Max Gnoyke, who’d worked with the legendary Michel and Albert Roux at Le Gavroche. Together they spent weeks testing brines, breading blends and spice ratios until they struck gold. It was no easy ride — a painstaking, flour-covered, fryer-splattered mission for perfection — but the result was worth it. That same signature chicken recipe still powers every Pattersons site 11 years later.

From Simple Beginnings to a Cult Menu
Back in the day, the menu was dead simple: fried chicken, a chicken burger and chips. That was it. Because when your chicken slaps that hard, it doesn’t need dressing up.
Then came the upgrades. First, our Famous Gravy — another mission in itself — thick, rich, and made to dunk everything in sight. Then we went all in on Loaded fries, Gourmet burgers, Crispy wings, tenders, and the latest Northeast hero: our Loaded Chicken Parmo. Every dish is built around that same signature crunch, just with new ways to ruin your diet (in the best way).
What We’re Buzzing For at STACK
STACK’s exactly our kind of playground — street food, live music, proper people. We’re bringing our Liverpool attitude up the road, and we can’t wait to serve the Northeast our boss chicken with a side of chaos.
