STACK LINCOLN SAYS HOLA TO EL MEXICANA

STACK Lincoln is preparing to spice up its food offering – with the arrival of two exciting new traders.

The flavours of Mexico will be on offer at the leisure hub from 4 December, when fast-growing chain El Mex Burrito Bar and its sister company, Don Churro, takes over two units on the roof terrace.

The new street food vendors will be bringing a new dimension to the existing offer at STACK, with a range of build-your-own burritos and Mexican-themed desserts.

Diners can pick from a range of burritos with different fillings and sauces as well as being able to tuck into loaded fries and nachos.

Each burrito is filled with rice, black beans, pico and slaw with the options of adding in chargrilled chicken, pulled pork, tinga chicken – which is marinated in chipotle, onion and tomato – or veggie or beef chilli.

El Mex Burrito Bar is renowned for its sauces, which range in heat from the mild garlic crema to mango scorpion  - mangoes blended with super-hot scorpion chillis.

The new outlet will sit next to Don Churro, which has taken the popular churros dessert and elevated it with a range of sauces, toppings and ice creams.

Paul Stagg and John Coverley, joint owners of El Mexicana, are delighted to be moving into STACK Lincoln and bringing the concept to the city.

 “We are very excited to bring El Mex Burrito Bar and Don Churro to Lincoln,” said Paul.

“Our locations are often chosen on the basis of being experiential, so STACK completely fits the bill for us.”

John added; “We are looking forward to opening and sharing our authentic Mexican food with the people of Lincoln.”

Neill Winch, CEO of STACK, believes that the brand will perfectly complement the existing offering.

“El Mex Burrito Bar and Don Churro are a fantastic addition to the site and will bring yet another much-loved cuisine to STACK Lincoln,” he said.

“We are delighted that the company has chosen STACK as their next venue and we are sure that both outlets will be a huge hit with visitors.”

The new traders will join existing vendors, Greek food experts Acropolis, Holy Duck, ZZA Pizzeria, Barbell Burger, YOLO Coffee and Kitchen and Oh La La fried chicken and fries at STACK Lincoln, with more new businesses to be announced soon.
